In a saucepan, sauté the onion in butter until golden, then add the lettuce (previously boiled and roughly chopped), the roasted bell pepper, peeled and sliced into strips, salt, and pepper, and let everything flavor together. Then add the tomatoes, peeled and chopped, and a pinch of saffron; cook for 15 minutes, then add the sausage and, at the time of serving, pour it hot over the pilaf rice.

Tips
To achieve an even more flavorful dish, I recommend using high-quality sausage and browning it well so that it releases all its aroma before adding it to the other ingredients.
